We itemize everything with ItsDeductible (Intuit's TurboTax companion) every year... usually takes about 4-6 hours but we end up writing off more than $1000 in stuff, which equates to significant money on the bottom line. Our method is to take pictures of everything we donate, name the picture files what is being donated, and print out an "index" of them and keep it with the receipt.
